Easy Apple Pie

Easy American Pie

The Showt’s easy apple pie—impress your family and friends with this simple and delicious baked dessert. To be consumed only…not defiled. We know how you get after a couple drinks!

Ingredients:
1 package pre-made double apple pie crust (it’s two crusts per package – top and bottom) Use the organic spelt crust from whole foods to get a deep rich brown color
2 lbs fresh organic apples – mix of granny smith and golden delicious
1 heaping tablespoon of flour
½ cup organic cane sugar
½ cup light brown sugar
1 tsp vanilla extract
1 tablespoon cinnamon
1 tsp nutmeg
1 tablespoon dark rum or orange liquor
2 tablespoons of cold butter
1 lemon – get 2 tablespoons of juice from this. Save the pieces for water bath.
1 egg yolk – beaten

Directions:
1) Preheat oven to 350 degrees and place a rack in the center with a drip pan underneath (you can use tinfoil as well)
2) Defrost pies shells while you make the filling. Make sure you separate the pie shells so they don’t stick to each other.
3) Make the filling:
a. Put water and 1 tbls of lemon juice into a big bowl.
b. Peel, core and cut apples in pieces about the size of your thumb and place into water bath. This will keep them from turning brown.
c. Once you have cut all the apples, drain the water and add flour, sugars, vanilla, cinnamon, nutmeg, rum and 1 tbls lemon juice.
4) Put filling into one of the pie shells. It should be high so that when you put the other crust over it looks like a full pie
5) Put 1 tbls of butter on top of apples in various places
6) Place other crust on top and seal the sides with pinches of a fork or your fingers.
7) Brush top with eggwash and then add butter and dust with cinnamon.
8) Bake for 50 minutes at 350 degrees.
9) Remove and let rest for at least 15 minutes before serving.
10) This can be made days ahead and either reheated or served cold. Reheat for 20 minutes at 350 degrees.
